The classic Vietnamese Phin Dripper

The Phin – Vietnams iconic coffee brewer is found in almost every household. Due to its shape and volume it creates a strong-bodied and tasty cup of coffee. Adding ice and condensed milk is a classic. At Bộ Lạc we recommend using the Phin with our Robusta coffee. Blending in some darker roasted Arabica can be interesting too.

 

The classic Phin-kit consists of 4 parts:
– brewer body
– tamper
– lid
– mesh plate

Else you will need:
– A glass or a cup
– A small spoon
– 100ml of hot water
– 20g of coarsely ground coffee (about two large table spoon)

The coffee-to-water-ratio in our recipe is 1:5 and can be adjusted to your taste. 1:6, 1:7, etc.

 

Brewing with the Phin:

Step 1
In case you want to add condensed milk to your coffee, put it in the glass or cup first. It will be easier to dose and if you have a transparent cup or a glass, the visual effect will be quite nice too.

Step 2
Add 20g (two large table spoon) of coarsely ground coffee into the Dripper. Give it a gentle shake to even out the coffee bed and place mesh plate and dripper on top of your glass or cup.

Step 3
Bring the water to a boil in a water kettle. (The ideal temperature is close to boiling. So don’t worry – as hot as possible for this brewer!)

Step 4
Carefully pour about 30g of hot water directly over the grounds. Make sure all the grounds are wet. If you like you can gently stir with your little spoon to make sure there is no pockets with dry coffee left. Let the coffee pre-bloom for 1 Minute. Gently place the tamper on the coffee bed – don’t squeeze.

Step 5
Pour the remaining 70g of water in a circular motion slowly into the dripper until it’s filled to the top. Place the lid and wait for another 4 minutes. Robusta coffee likes to brew a little longer than Arabica in order to extract all the goodies from the coffee.

Step 6
After the total brewing time of 5 minutes, take off the lid, place it upside down on the table and place the mesh plate with the brewer on top of it. By doing so, you can avoid a mess in your kitchen and wait for the brewer to cool down, before cleaning it later on.

Step 7
Stir your coffee a few times. If you added condensed milk to your cup in the beginning, make sure you stir as long until all the milk is dissolved – this can take a bit longer than for fresh milk, which tastes great with your coffee too. In case you’d like to add ice on a hot summer day, we recommend letting the coffee cool down for a little bit. A single, thick ice cube, to prevent the ice from melting down too fast and diluting the coffee, is advisable too.

What could have gone wrong?

In case the water drained through the filter too quickly you may have poured the water too aggressively or the coffee grind is too coarse. If you have your own grinder at home, adjust a little finer and try again.
